People thinks that preparing a cake is not an easy task, and if it is an eggless cake then it will not become spongy or it will not be that much moist and tasty as the cake with egg.
In this moist marble cake recipe, I have used curd and baking soda together. Curd and baking soda react and release carbon dioxide to make the cake spongy and soft.This eggless cake recipe is very easy to make. Anybody can bake a cake by watching this step by step photos and description.

Pre-heat a microwave at 180°C.
Sieve 2 cups Maida, 1 teaspoon Baking Powder, and 1/4 teaspoon Salt in a mixing bowl.
Sieving makes the flour airier. It helps the cake to rise and to become softer.
Take 1/2 cup of Butter and 3/4 cup Sugar in a separate mixing bowl and beat it in one direction till the mixture becomes soft.
Butter should be at room temperature. No need to melt the butter.
Add flour to the butter and mix it well. Add 3/4 cup Milk (Remaining 1/4 cup of milk will be needed afterward, so don't add full 1 cup of milk) and prepare a batter. Add 1 teaspoon Vanilla Essence and mix well.
1 - In a small bowl take 3 tablespoons Curd, 1 tablespoon Water and add 1 teaspoon Lemon Juice.
2 - Add 1/2 teaspoon Baking soda to the mixture.
3 - Bubbles will start to come.
4 - Immediately add this mixture to the batter.
Divide the batter into two parts. In one part add 1.5 tablespoon Cocoa powder and 1.5 tablespoon Milk. Mix the batter.
Grease a baking pan. Apply oil or butter to a pan and dust some maida to the pan. Remove the excess maida. Pan is ready.
Add both the batter in a pan. Add them one by one to make layers of the vanilla and chocolate batter. Mix it with the help of butter knife or finger to give a marble effect.
Mix it very softly otherwise both the mixtures will get mixed together.
Bake the cake at 180°C for 25 to 30 minutes.
check by inserting a clean knife or a toothpick in a cake. If it comes out clean that means the cake is baked properly.
Keep the cake aside to come to the room temperature. Remove it gently on the wire tray.
After cooling serve it as a sponge cake or use it to make pastry.
Recipe Notes :
- You can adjust the amount of sugar as per your taste.
