Nowadays children are very fussy about eating vegetables, for such children this Chinese fried rice is a healthy option.
This fried rice recipe tastes more Chinese than the Indian version (Indo-Chinese).
Add celery if available to give authentic Chinese taste.But if it is not available you can skip it, as there is no other substitute for this.
Add Chinese 5 spice powder instead of any garam masala powder or red chili powder to get an authentic taste. But if it is not available you can use 1-star anise, a small piece of cinnamon, 2 cloves and 2 schezuan peppers (triphal) (it is also spelled as Sichuan peppercorn)
Fried rice tastes nice with the Manchurian with gravy.

Take 2 cups of rice. Long grain rice is preferred.
Wash the rice and cook it. Cook the rice with limited water and add 1 teaspoon of oil and salt while cooking.After cooking spread the rice on a plain sheet. This will help to cool the rice quickly. You can also use a day old cooked rice for this.
Finely chop all the vegetables.
Chinese dishes are generally made on high flame, so make sure that all the ingredients are ready before you start.
Keep a big pan or a wok on a stove. Heat oil and fry red chilies in that.
Add chopped garlic and ginger. Fry this for a minute.
Then add vegetables one by one. The vegetable which takes time to cook is to be add first. So first add cauliflower, fry it for a minute. Then add French beans again fry for a minute. Same way add broccoli, carrot and at last add capsicum. While adding the vegetables keep stirring, otherwise the vegetables may get burnt. You can also add mushrooms and celery. Add a pinch of salt in vegetables. All the sauces we are going to add in fried rice contains salt, so be careful while adding salt to the vegetables.
Add 1 teaspoon of soybean sauce, 1 teaspoon of green chili sauce, 1 teaspoon of red chili sauce, 1 teaspoon of tomato ketchup, 1 teaspoon of 5 spice powder and 1 teaspoon of pepper powder to the vegetables.
Fry and mix all the ingredients nicely.
Add the boiled rice stir the rice quickly. Add vinegar and mix it properly. Fry the rice for 2 to 3 minutes.

Garnish it with the spring onion.
Recipe Notes :
- You can skip red chili sauce, green chili sauce, and tomato ketchup to make simple fried rice. Instead of that add 2 extra teaspoons of soy sauce.
- Similarly, you can make chicken fried rice and egg fried rice. Follow the same recipe for both only add 1 cup small pieces of boiled chicken pieces or two bitten eggs with vegetables.
- If 5-star spice is not available you can use 1-star anise, a small piece of cinnamon, 2 cloves and 2 schezuan peppers (triphal)
