Puffed rice laddu is a crispy, crunchy, light and healthy recipe. This is a recipe without oil or ghee. It is a sweet recipe so children will love this. It is a very simple easy recipe which requires very less number of ingredients as puffed rice, jaggery and fried gram(optional). It is healthy snacks for kids as the main ingredient is jaggery, which is full of iron and minerals like zinc, selenium, and potassium.
Store the laddus in an airtight box to keep them crispy and crunchy for weeks.

First of all take a big bowl of fresh and crunchy puffed rice (murmura).
If the puffed rice is not crunchy, dry roast it for 5 to 7 minutes.
Take 1 to 1.5 cup of jaggery and 1 cup of fried gram (fried gram is optional, but I like this combination).
Take one big size kadhai and keep it on a stove for heating. Add jaggery and 1 to 2 teaspoon of water. The water will help to avoid jaggery to be burnt and also it helps jaggery to melt easily. Keep stirring till the jaggery gets melt otherwise, it will get burnt.
Meanwhile, mix the puffed rice and fried gram together.
Let the syrup boil properly and keep stirring in between.
Check the consistency of the jaggery syrup. The consistency should be a soft firm ball. You can check this consistency by putting 2 to 3 drops of jaggery syrup into a bowl filled with water.
If the drops get melt in water, cook the syrup for some more minutes. When you put drops of jaggery syrup in water it should form a firm but softball shape as shown in the picture.
When your syrup is ready pour the puffed rice and fried gram and mix the mixture vigorously.
Now the mixture for laddus is ready for rolling.
Start rolling laddus immediately because, if the mixture gets cool,It will become hard and you will not be able to roll the laddus.
Your crispy, crunchy, tasty and delicious puffed rice laddu ( murmura laddu ) are ready.
Keep it in an airtight box, it will remain crispy for weeks.
>>Recipe Notes –
1.Deep your hands in clean water before rolling laddus, so the jaggery syrup will not stick to your hands.
2.You can add Cardamom powder to enhance the taste of laddus.
